Zesty Quinoa and Avocado Salad Recipe
Ingredients:
- 200g quinoa, rinsed
- 250ml water
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh coriander, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- Juice of 2 limes
- 1 tsp ground cumin
- Salt and pepper to taste
Instructions:
- Cook the Quinoa: In a medium pot, bring the quinoa and water to a boil. Reduce the heat, cover, and simmer for about 15 minutes, or until the water is absorbed and the quinoa is fluffy. Let it cool.
- Prepare the Vegetables: While the quinoa is cooling, prepare the avocado, cherry tomatoes, cucumber, bell pepper, and red onion.
- Mix the Salad: In a large bowl, combine the cooled quinoa, avocado, cherry tomatoes, cucumber, bell pepper, red onion, coriander, and mint.
- Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, ground cumin, salt, and pepper.
- Combine: Pour the dressing over the salad and toss gently to combine.
- Serve: Serve immediately or chill in the refrigerator for an hour to let the flavours meld together.
Tips for a Perfect Salad:
- Add Protein: Toss in some chickpeas or black beans for added protein.
- Extra Crunch: Sprinkle with toasted sunflower seeds or pumpkin seeds.
- Flavour Boost: Add a pinch of chili flakes or a dash of hot sauce for a spicy kick.
